Be Aware: A hot pepper from a grocery store will vary wildly on the amount of spiciness it contains due to a huge number of variables. EG: The age of the pepper when it was harvested, where it was grown, climate, what other plants were grown near it(cross pollination), etc.

Start the sauce with fewer peppers, if you want more “heat” saute a few more peppers and then add them to your batch of sauce. It’s way easier to add additional spiciness than it is to take it away.

Quick hot sauce recipe:

2-3 ea Roma Tomatoes
8+ Hot Peppers (I recommend jalapeno or Serrano peppers)
2-3 ea SMALL Onions or 1/2 a medium onion (rough chop it)
1 ea Clove of garlic, crushed (Optional add towards the end)
1 cup White Vinegar
Salt and pepper to taste

Heat some oil in a large pan
Add the first 3 ingredients & cook over medium – high heat until the pepper skins have blistered and the tomatoes have started to split. Stir/move everything around frequently and adjust your heat so things don’t turn into charcoal.
Add the crushed garlic and saute lightly until it starts to brown. Add the vinegar, a pinch of salt and black pepper, and cover.
Bring it to a rolling boil and let it reduce by half.
Remove from heat and cool slightly.
Blend/puree all of the ingredients together.
Taste and adjust with additional salt and pepper.

Store in the refrigerator for up to 7 days.

To make the sauce hotter use more peppers. To make it less spicy use fewer peppers and/or add more tomatoes to the mixture the next time you prepare it. You will have to play with your quantities to dial in the heat levels to your ideal range.
