2.5 Lb Redskin Potatoes (Skin on, sliced, cooked and drained)
1 cup Heavy Cream
3/4 tsp Kosher Salt
1/2 tsp Garlic Powder
1/8 tsp Onion Powder
1/8 tsp White Pepper
7 ea Strips of Bacon, Cooked & Chopped (**Reserve 2 for garnish)
3/4 cup Sharp Cheddar Cheese, Shredded or Crumbled (**Plus more for garnish)
1/3 cup Sour Cream (**Plus more for garnish)
3 Tbl Fresh Chives, Finely Chopped (**Reserve 1 Tablespoon for garnish)
Cook and drain your potatoes.
Just before they are finished cooking combine the cream, salt, garlic powder, onion powder, and white pepper in a small sauce pan.
Bring to a boil and stir well.
In a large mixing bowl combine the redskin potatoes and cream mixture. Mash until smooth.
Add the final 4 ingredients and briefly mix.
Taste, and add more salt and pepper to suit your pallet.
For a richer final product add an additional 1/3 of a cup of sour cream.
