Dough Guide: (Add all ingredients directly into the mixing bowl in the order they are listed)
1 tsp Instant rise yeast
1.5 tsp Granulated sugar
3 Tbls Olive oil (any oil will do)
2 cups Warm water (not hot)
1lb 12oz Bread Flour (I like King Arthur bread flour for consistency)
1.75 tsp Kosher Salt
Mix on the first speed with a dough hook for 12 minutes
Divide into 4oz portions and flatten
Lightly oil and cover with plastic wrap or a damp towel
Let rise in a warm location for 30-45 minutes
2 tablespoons of cold water
Add both items into a small bowl and whisk till smooth with a fork.
Pre HEAT OVEN to 400 Degrees Fahrenheit
Bring 6 cups of water to a boil then remove from heat
SLOWLY add 4 tablespoons of baking soda; bring back to a boil
Cook raised dough for 30 seconds on each side, dry excess water.
Make 2 shallow cuts on the top of each pretzel roll
Bake for 4 minutes, remove from oven and apply egg wash
Bake for 6 minutes, turn pan, and then bake for 10 more minutes.
Pretzel buns are done when nice and golden brown.
(Optional) Directly out of the oven: Apply a tiny amount of water to the top of a roll and sprinkle with kosher salt or pretzel salt.
